Two weeks ago I made the little trip across the river and visited the Elbow Room to eat in their restaurant Graze. I had a delicious tomato soup with chickpeas. I was craving it a few days after so I decided to give it a go myself with a few added bits and pieces. I made it with a lovely spicy kick and had sweet potato fries on the side. A hearty meal for lunch.
I also made these gorgeous cookies from the Deliciously Ella cookbook Steph got me for my birthday. They are delicious. Totally vegan and so easy to make. Such simple ingredients. I would highly recommend them. I don’t think they are on her website but have a look anyway. You will get loads more amazing recipes if you can’t find these ones.
I am also just back from a wonderful city break in Prague. That city is gorgeous and SO HOT! The temperature was in it’s 30’s the whole time we were there. I find myself eating a lot of Asian when I go away. It is the one type of cuisine that always has decent vegetarian options. We couldn’t try the local Czech cuisine as it is completely meat based. So we had Italian one day, Mexican the next and Asian. Twice. However, on the last day, we went for brunch in a vegetarian restaurant that had really good reviews and it did not disappoint! It was called Lehká Hlava which means Clear Head. And it clearly is a popular spot. We thought we were there too early as it opened at 11.30 but there was still a couple in front of us. It filled up so quickly though. I wanted to try everything as usual so treated it as lunch instead of brunch. So we each ordered soup to start. I had an amazing cauliflower number while himself had a coconut lentil soup.
Then the mains came out. Himself had bread with vegan fois gras, made of cashews with cranberry sauce on top. It was really tasty. Though it just looks like hummus here, it was so much more.
But then, THEN my main came out and it is honestly the tastiest vegetarian dish I have ever tasted in my life. I actually couldn’t stop talking about it as I ate it. The flavours were amazing. It was a Goat’s cheese salad on top of gratin potatoes. But my god, whatever they did to that cheese absolutely blew my mind. It looked good and tasted even better. I honestly died and went to veggie heaven. I want it right now again, typing about it. Look at it. LOOK at those pictures. Mouth watering-ly delicious.
Then after that we went for a wander around the city. We visited a gallery that had both a Dali and a Warhol exhibition. We sat on the rooftop terrace of U Prince Hotel, one of the hotels that has one of the Top 15 views in the World, apparently. It was stunning. We treated ourselves to ice cream which we had to eat at the speed of light to stop it melting. The heat really was extreme but it didn’t stop us exploring the castle, it’s gardens and going on a boat trip.
Oh and before I go, here are my recipes for that delicious tomato soup and sweet potato fries.
- 1 tin of chopped tomatoes
- 1 chopped red onion
- Handful of chopped cherry tomatoes
- 2-3 cloves of chopped garlic
- 1 tin of chickpeas
- A pinch of chilli flakes
- Salt and Pepper to seaon
- 1/2 teaspoon of oregano
- 1/2 teapsoon of parsley
- Sauté the onions and garlic in a bit of olive oil in a saucepan until tender.
- Add in the cherry tomatoes
- Add the tin of chopped tomatoes and the chickpeas.
- Add the rest of the herbs and let simmer for about 20 minutes, then serve.
Sweet Potato Chip Ingredients
- 2-3 Sliced sweet potato
- 1 Tablespoon Olive Oil
- 1 teaspoon of Paprika
- Salt and Pepper to taste
- Place the sliced sweet potatoes into a steamer and lightly blanch them for 5 minutes.
- Pop them onto a baking tray, drizzle over the olive oil.
- Coat them in the salt pepper and paprika.
- Leave in the oven until crispy on the outside.
